Cookin' with J & K

The May flowers are blooming. Aren’t we all optimists, knowing that spring will arrive eventually?
The definition of optimism is the belief this world is the best possible world. Another definition is an inclination to anticipate the best possible outcome. That is why we plant a garden or flowers each spring.
A GREEN tip: When cooking, use the size pot for the burner, or the burner that is the best size for the pot. A 6-inch pot on an 8-inch burner wastes more than 40 percent of the burner’s heat.
Broccoli Strawberry Salad
4 cups fresh broccoli florets
4 oz. colby-jack cheese, cut into ½-inch cubes
1 cup mayonnaise
2 tbsp. sugar
1 tsp. cider vinegar
1 cup fresh strawberries, quartered
¼ cup sliced almonds
Mix broccoli and cheese together. Make dressing with mayonnaise, sugar and vinegar.
Mix well to dissolve sugar. Pour over salad.
Just before serving, mix in strawberries and almonds. You may mix in celery or fresh sliced mushrooms.
Most of today’s worries are like puddles - by tomorrow they will have evaporated.
